Chocolate Meringues

Make a classic meringue just a bit richer by making these chocolate versions! Slightly fudgy, these meringues give you that little chocolate fix you're looking for. They fit just about any diet because they're super low calorie, low carb AND low fat. Not many desserts can say that.

Chocolate Meringues

Inspired by The Ultimate Gluten Free Cookbook by Roben Ryberg

Makes about 30

You need:

2 large egg whites (room temp)

3T powdered stevia blend (granular is fine)

1/2 tsp vanilla extract

1/4 C unsweetened cocoa powder

Directions: Preheat the oven to 300 degrees. Spray a baking sheet with cooking spray or use a non-stick mat. Whip egg whites, stevia and vanilla extract until stiff. Gently sprinkle on the cocoa powder and fold in, taking care not to flatten the egg whites.

Using a pastry bag with a large star tip, or a teaspoon, place the mixture on the baking sheet. Bake about 15 minutes or until slightly brown on top. Let cool for a few minutes on the baking sheet, then transfer to a wire rack.
