Dalgona coffee is all the buzz on the interwebs, but what is it?

Dalgona coffee is a Korean street coffee made with milk and topped with a whipped coffee/sugar foam. It’s kinda like a reverse cappuccino. Popularized by Actor Jung II Woo, it's origins are traced back to Macau but many also claim this style of coffee has been made in India and Pakistan with a different name. This particular style ends up with coffee much creamier than ordinary coffee.

My keto Dalgona coffee is super easy to make. All you need is:

An electric hand whisk (or whisk by hand but that takes awhile!)

Instant coffee

Boiled water

Sweetener (I like a erythritol/stevia blend)

Milk of any kind (I like either coconut milk or almond milk)

Heavy cream (optional, but really makes the drink nice and creamy. Omit for dairy free or vegan)

Ice

That’s it!

Whip the water, coffee and sweetener until it becomes nice and fluffy. This takes several minutes. You’ll know it’s the right consistency when you remove the whisk and stiff peaks form. It looks creamy like caramel and very thick.

Fill a cup halfway with ice. Add the milk and heavy cream.

Top with the whipped coffee foam and enjoy with a straw. Slowly incorporate the foam with the milk as you drink it so the flavors stay combined.

I also like to sprinkle some cinnamon on top for some added flavor.

To make this a hot version, omit the ice. Fill a mug 2/3 full with milk of choice. Top with the whipped coffee mixture and enjoy!
