Pumpkin Spice Latte

I hope you love pumpkin because this recipe is for YOU!

I created this Pumpkin Spice Latte recipe for anyone who loves actual pumpkin in their coffee. This gives a nice little added fiber and a richer flavor than my Protein Spiced Latte recipe. Use an immersion blender to emulsify the coconut oil and thicken the coffee just a bit.

Pumpkin Spice Latte

Serves 1


6 oz brewed coffee or espresso

3T pumpkin puree

¼ C + 2T full-fat coconut milk

¼ C unsweetened vanilla almond milk

½ T coconut oil

½ tsp pumpkin pie spice

1 tsp vanilla extract

15 drops stevia


Brew coffee.

In a small saucepan, warm the milks, pumpkin puree and coconut oil until just boiling. Remove from heat.

Add pumpkin pie spice, vanilla extract and stevia. Blend well using an immersion blender, regular blender or whisk. Pour coffee into a mug and add the milk mixture.
